The John Joseph Inn and Elizabeth Restaurant is a full service luxury inn and restaurant on thirteen acres, minutes from Cayuga Lake. It is owned by two CIA alumni chefs, John and Elizabeth Hamilton, who manage the business, restaurant, inn, and farm all in environmentally-conscious practices. The restaurant utilizes food from local farms (organic whenever possible) and sustainable fish/agriculture including the farm’s own chicken eggs, ducks, and soon cattle and hogs. With an all-natural fifty tree apple orchard and berry patches, the business will expand beyond its already eighty-year-old fruit production to grow its own heirloom produce and varietals of vegetables.
The inn uses 100% organic cotton linen, and all-natural cleaning products. The owners run the business with the environment in mind, and are constantly looking to improve. In the future they plan to be mostly self-sufficient, producing many of the products used on the property themselves. In addition, they hope to implement a wind energy program soon. From installing recycling and composting programs, to investing in better practices for the future, this is one of the leading eco-friendly inn and restaurants in New York State.
